What should I eat on my first week of an elimination diet?

I would suggest eating per usual, and just eliminating one thing at a time. For example, if you're looking to possibly help alleviate your knee pain and you're thinking about removing foods that cause inflammation...just pick one food to remove. That way, you can see how you feel in your body as a result of removing that ONE thing. Does that make sense?
